VINIFICATION PROCESS
THE VINIFICATION PROCESS FOR CASTELLO DI PERNO LANGHE NEBBIOLO BEGINS WITH DESTEMMING AND 48 HOURS OF COLD MACERATION TO PRESERVE THE GRAPE'S FRESH AROMAS. THIS IS FOLLOWED BY A 20-DAY SPONTANEOUS FERMENTATION AT CONTROLLED TEMPERATURES. THE WINE IS THEN AGED FOR 8 MONTHS IN LARGE SLAVONIAN AND FRENCH OAK CASKS, ADDING DEPTH AND COMPLEXITY. BEFORE BOTTLING, IT UNDERGOES A BRIEF MATURATION IN CONCRETE TANKS AND IS THEN REFINED IN THE BOTTLE FOR AT LEAST 6 MONTHS, RESULTING IN A WELL-BALANCED, STRUCTURED WINE.
