VINIFICATION PROCESS
THE VINIFICATION PROCESS FOR CASTELLO DI PERNO BAROLO 2017 BEGINS WITH HAND-HARVESTED NEBBIOLO GRAPES FROM CAREFULLY SELECTED VINEYARDS IN THE BAROLO REGION. AFTER DESTEMMING, THE GRAPES UNDERGO FERMENTATION IN TEMPERATURE-CONTROLLED STAINLESS STEEL TANKS, WHERE THEY MACERATE FOR AN EXTENDED PERIOD TO EXTRACT OPTIMAL COLOR AND TANNIN. FOLLOWING FERMENTATION, THE WINE IS AGED IN A COMBINATION OF LARGE OAK BARRELS AND SMALLER FRENCH BARRIQUES FOR ABOUT 24 MONTHS, ALLOWING IT TO DEVELOP ITS COMPLEX FLAVORS AND AROMAS. THE WINE IS THEN BOTTLED AND FURTHER AGED FOR SEVERAL MONTHS BEFORE RELEASE, RESULTING IN A RICH AND WELL-STRUCTURED BAROLO THAT REFLECTS THE UNIQUE TERROIR OF ITS ORIGIN.
