VINIFICATION PROCESS
THE VINIFICATION PROCESS FOR CASTELLO DI PERNO BAROLO 2018 BEGINS WITH METICULOUSLY HAND-HARVESTED NEBBIOLO GRAPES FROM THE BAROLO REGION'S FINEST VINEYARDS. AFTER DESTEMMING, THE GRAPES UNDERGO FERMENTATION IN TEMPERATURE-CONTROLLED STAINLESS STEEL TANKS, ALLOWING FOR PRECISE MANAGEMENT OF THE FERMENTATION PROCESS. THIS IS FOLLOWED BY AN EXTENDED MACERATION PERIOD TO EXTRACT RICH COLOR, TANNINS, AND FLAVOR. THE WINE IS THEN AGED FOR APPROXIMATELY 24 MONTHS IN A COMBINATION OF LARGE OAK BARRELS AND SMALLER FRENCH BARRIQUES, WHICH ENHANCES ITS COMPLEXITY AND DEPTH.
