MONTRESOR LONG CHARMAT METHOD. ONCE THE GRAPES REACH THE WINERY, THEY UNDERGO AN IMMEDIATE SOFT PRESSING. AFTER THIS PROCESS THE WINE, WHICH IS EXTREMELY FRAGRANT AND APPEALING, IS REFERMENTED, TOGETHER WITH SELECTED YEASTS, IN AUTOCLAVE UNTIL ITS COMPLETE MATURATION.
