THE HAND-PICKED GRAPES ARE SELECTED BUNCH PER BUNCH AND ARE PLACED IN SMALL RACKS TO DRY DURING THE WINTER MONTHS. A SOFT PRESSING FOLLOWS WITH A SLOW FERMENTATION ON THE SKINS AND AGING IN OAK BARRELS FOR ABOUT 18 MONTHS.
