AFTER CRUSHING AND DESTEMMING, THE MUST UNDERGOES FERMENTATION IN STAINLESS STEEL TANKS AT CONTROLLED TEMPERATURES TO PRESERVE THE VIBRANT FRUIT FLAVORS. A PERIOD OF MACERATION WITH THE SKINS FOLLOWS, EXTRACTING DEEP COLOR, TANNINS, AND COMPLEXITY.
